Allspice ( 1 gm) Nutmeg to taste 1/2 tsp. baking soda (2 gm) Syrup 3/4 cup Greek amber honey (175 ml) 3/4 cup sugar (175 ml) 3/4 cup water (175 ml) 1 tsp. ground cinnamon (5 ml) 1 cup finely chopped walnuts, for garnish (250 ml), optional Preheat oven to 350 degrees F Whisk together the wet ingredients, with sugar and spices, in a medium bowl. Over a piece of parchment paper, sift flour, baking powder and baking soda 3 times. Add the sifted dry ingredients to the oil mixture and stir with wooden spoon until mixture just holds together. Dough will not be fully smooth but should hold together. Note: texture of dough might vary depending on the protein level of your flour. Pinch off about 1 1/2 tbsp. portions of dough (25- 27 gm ) and form into little flat oblongs (football shapes). Place on a parchment-lined baking sheet 2-inches apart. Bake in oven at 350 degrees convection F for 25- 30 minutes, or until evenly browned. Syrup Boil honey, sugar, water, and cinnamon for 8-10 minutes, until deep amber colour and slightly reduced. Remove from heat. While syrup is still hot, and cookies are still hot, using slotted spoon place cookies 6-8 at a time- into syrup for about 2-3 minutes, turning often to completely coat. Transfer to a large baking sheet or pan and arrange in a single layer. Sprinkle with chopped walnuts , if desired. Repeat with remaining cookies. Get the recipe here: 🤍 Ingredients For the Syrup: 1 and 1/4 cup granulated sugar 1 and 1/4 cup water 1 cinnamon stick peel of an orange 1 cup honey The Cookie Dough Dry Ingredients: 3 and 1/2 cups (500g) all-purpose flour 3/4 cup (150g) fine semolina flour 1 teaspoon baking powder the zest of 2 oranges 1 teaspoon ground cinnamon 1/4 teaspoon ground cloves For the Cookie Dough Wet Ingredients: 1 cup (250ml) light olive oil or veg. oil 1/2 cup (100g) granulated sugar 1 teaspoon pure vanilla extract 3/4 cup (185 ml) fresh orange juice 1/2 teaspoon baking soda For the Topping: 3/4 cup ground walnuts 1 heaping teaspoon ground cinnamon 1/4 teaspoon ground cloves Instructions Preheat the oven to 350 °F, 180 °C. Line 2 baking trays with parchment paper. Make the Syrup: In a saucepan combine the sugar, water, cinnamon, and orange peel. Bring to a boil and as soon as the sugar dissolves add the honey. Remove from the heat, stir and set aside to cool. Make the Dough: Combine all of the dry ingredients in a large bowl and whisk them together. In another bowl, combine all of the wet ingredients and whisk together. Make a well in the center of the dry ingredients and pour the wet ingredients into the bowl. Gently mix together until a dough has formed. Do not over-mix or the cookies will become oily. Form the Cookies: Take a piece of dough (walnut-sixed, about 35-40g) and roll it in your hands. Form it into an oval and then press the tips in so that they are rounded and they don't burn. Place the dough on the prepared baking trays and then flatten the tops a bit. Pierce the top of each cookie with a fork to create a decorative pattern (see video). Bake on the center rack of the preheated oven for 20-25 minutes or until golden and crisp. Using a slotted spoon immediately dip the hot cookies (about 4-5 at a time) into the cool syrup. Let them soak for 20-25 seconds flipping them over a-few times. Transfer the cookies to a serving tray and pour the remaining syrup on top. Combine all of the topping ingredients into a small bowl and mix them together. Sprinkle over the cookies and serve! Shop here:🤍 Get the recipe: 🤍 Ingredients For the dough: 4 cups (580g) all-purpose flour ½ teaspoon baking soda 1 teaspoon baking powder 1/2 cup of extra virgin olive oil 1/2 cup light olive oil or vegetable oil ½ (100g) cup of sugar ½ cup (125ml) of orange juice Zest of 2 oranges For the syrup: 2 cups of sugar 2 cups of water 2 cups honey For the garnish: ¾ cup ground walnuts 1 heaping teaspoon ground cinnamon ¼ teaspoon ground cloves Instructions Preheat oven to 350 °F, 180 °C. Place the flour, salt, baking powder, baking soda, and orange zest into a bowl. Whisk together to combine. Always zest citrus before juicing. Combine the oil and sugar in another bowl and whisk together until the sugar has dissolved. Combine the orange juice and the baking soda together. Mix it and add to the oil mixture. Add the oil mixture to the flour mixture and mix together until a dough is formed.Be careful not to overmix so that the oil does not separate from the dough. If the dough seems a bit too dry and crumbly add 2-3 tablespoons of orange juice and knead together with a spatula or your hands. Turn the dough out onto a work surface, compress it and form a circle. Roll out to ½ inch in thickness. Do not use any additional flour to do this. Using a 2-inch round cookie cutter, cut out the cookies. Place them on baking sheets lined with parchment paper. Use a fork to make marks on each cookie. Bake for 30-35 minutes or until golden brown. While the cookies are baking make the syrup. Combine the water and sugar in a saucepan and bring to a boil. Stir until the sugar dissolves. Remove from heat and add the honey. Stir until incorporated. As soon as the cookies come out of the oven, put them all together in one of the trays and pour the hot syrup over them. After 15 minutes, carefully flip each cookie over so that both sides absorb the syrup. Allow the cookies to absorb the syrup in the pan for at least 1 hour. Combine the ground walnuts, cinnamon, and clove powder and mix well. Sprinkle this garnish over each cookie and serve! Notes Store the cookies in an airtight container at room temperature. These Greek Christmas cookies are spiced with orange zest, cinnamon and ground cloves and once they’re baked, they get soaked in a honey-based syrup. Hi everyone. Today I have got for you Melomakarona. They are greek honey and walnut cookies, popular in Greece and Cyprus. They are a celebration cookie, but most often seen around Christmas. They are absolutely delicious. Growing up this wasn’t something made in my family. So I looked at various recipes, took a few tips off others, adapted them to the way I work and came up with this. I will say some of my ideas came from Mia Kouppa (lining a tray with nuts) and Akis Petretzikis (dipping them in honey syrup). I always give credit where due if something has inspired me to try my own. These will last up to three weeks. They can also be vegan if you replace honey with agave nectar or maple syrup. In today's recipe at Jocas Kitchen, we will make delicious Greek Honey Cookies. Melomakarona. It is a classic recipe. Greek cookies dessert. The main ingredient is honey, walnuts and an orange-flavored syrup are also added that makes it exquisite. You will love making this easy dessert that you can keep for several days in a cool, dry place. En la receta de hoy en Jocas Kitchen haremos las deliciosas Galletas Griegas de Miel. Melomakarona. Es un clasico postre en la cocina Griega. El ingrediente principal es la miel y naranja. tambien se le agrega nueces y un sirope sabor a naranja que lo hace exquisito. Le encantara hacer este facil postre que puedes conservar por varios dias en un lugar seco y fresco. Ingredientes para el sirope: 550mll de agua 800gm de azucar 3 palitos de canela 3 clavos de olor 1 naranja dulce partida en dos 1/2 taza de miel pura preparacion. agregar a cacerola todos los ingredientes. menos la miel dejarlo hervir 5 minutos. apagar y agregar la miel, incorporar bien y reservar. dejar enfriar 2 a 3 horas. Ingredientes y preparacion masa: En cacerola 400mll de jugo de naranja fresco con 50mll de brandi. agregar 400mll de aceite vegetal y 100mll de aceite de oliva agregar 50gm azucar glass, 1/2 chda de clavo dulce en polvo, 3 chdas canela en polvo 1 chda nuez moscada, 1 chta bakin soda y raspadura de 2 naranjas. combinar todo bien. En otra cacerola. 1kilo harina de trigo, 200gm de semolina fina y combinar bien. agregar esta ultima a la mezcla y mezclar todo despacio, como en el video. precalentar el horno a 200gr.c hacer bolitas medio alargadas.(como en el video) luego punzar poco profundo con un tenedor. colocar en cacerola con papel de hornear. dejarlas de 20 a 25 minutos. dorar desde que salen de el horno sumergirlas en el sipore ya frio 15 a 20 segundos. que absorvan bien el sirope y colocarlas en bandeja con rejilla. luego emplatar y agregarle miel y nueces troceaditas. disfruta English. Ingredients and dough preparation: In a saucepan 400mll of fresh orange juice with 50mll of brandy. add 400mll of vegetable oil and 100mll of olive oil add 50gm icing sugar, 1/2 tbsp powdered sweet cloves, 3 tbsp ground cinnamon 1 teaspoon nutmeg, 1 teaspoon baking soda, and zest of 2 oranges. combine everything well. Syrup preparation. Dissolved sugar in hot water. Add cinnamon, honey and stir well. Leave to cool down. 2. When the melomakarona is baked adds in cold syrup and leave for 5minutes to observed the syrup. 3. Strain and drizzled with the almonds. 4. In mixer bowl creaming sugar, oil, shortening for 10 minutes. 5. In different bowl mix orange jus with beer and soda. Mix well and pour to mixer bowl. 6. How to make Melomakarona (Greek Honey Biscuits)- With Dimi Create these classic Greek biscuits, Dipped in Honey and coated in toasted crushed walnuts. INGREDIENTS Biscuits: - 1 & 1/2 cups oil - 1/3 cup castor sugar - 1 teaspoon vanilla sugar - 1/2 teaspoon ground cinnamon - 1/2 teaspoon ground nutmeg - 1/2 teaspoon ground clove - Rind and Juice of 1 orange - 2 tablespoons brandy - 1/2 teaspoon baking powder - 1/2 teaspoon bicarbonate soda - 1/2 cup walnuts toasted & chopped - 3 & 1/2 Cups Self Raising Flour Honey for Dipping your biscuits & Walnuts: - 2 cups Honey - 2 cups walnuts toasted and chopped - 1/2 teaspoon ground cinnamon - 1/2 teaspoon vanilla sugar to sprinkle the biscuits METHOD Step 1: Preheat oven to 180c. Line 3 flat baking trays with baking paper Place in a stand mixer bowl, oil, castor sugar, vanilla sugar, cinnamon, nutmeg, clove, orange juice and rind and brandy. Mix for about 5 min. In a bowl add 3 cups of flour, baking powder, bicarbonate soda and mix well to incorporate all the ingredients. Slowly start to add the flour mix into the stand mixer with all of the other ingredients mixing with the paddle attachment. Once you have added the flour you might need to keep adding some extra flour until you see the flour coming off from the side off the bowl as it's mixing. NOTE do not add too much flour it needs to be like a light soft dough so that we can roll them out. Once done, cover the bowl with a tea towel and allow the dough to rest for 5 minutes. Using your hands, roll a table spoon mixture into oval shapes and place on lined trays. Bake for 25 minutes or until firm to touch. Allow to cool completely on the trays. Step 2: In a small bowl add the chopped toasted walnuts (this to coat the biscuits after they are dipped in the honey). Place honey in a saucepan over medium heat just before boiling point. Reduce to a low heat. Using a slotted spoon, dip cooled biscuits, 1 at a time, into hot honey for about 5-10 seconds, turning over until well coated. It's up to you how long you soak the biscuits, the more you soak them the softer they will become. Place the biscuits into a colander to drain off any excess honey. Place 1 biscuit at a time into the chopped walnuts, coating the whole biscuit. Place on your serving plate and once completed sprinkle with the ground cinnamon and vanilla sugar. ALLOW TO COOL AND SERVE.

In this recipe, I made them heart-shaped and dipped them in melted chocolate. You may use dark, semi-sweet, or a combination of both chocolates. Olive oil, honey and nuts make these classic melomakarona Greek Christmas cookies one of the healthiest sweets you can enjoy. You can find great Greek honey and olive oil on my online store here. 3 cups extra virgin Greek olive oil 1 cup sugar plus 1 teaspoon 1 cup water ½ cup orange juice 1 tablespoon soda 9 cups all-purpose flour For the Syrup 2 cups Greek honey 1 cup sugar 1 cup water 1 cinnamon stick Juice and 1 strip of zest from 1 large lemon 1 ½ to 2 cups 170 to 228 g finely ground walnuts for sprinkling Ground cinnamon for sprinkling Preheat the oven to 350°F/180°C and lightly oil several baking sheets. In the bowl of an electric mixer outfitted with a whisk, beat the olive oil with 1 cup of sugar at medium-high speed until creamy. Dilute the baking soda in the orange juice. Add the orange juice mixture, and water to the olive oil – sugar mixture. Whisk for 30 seconds. Change the whisk attachment to the paddle attachment and add the flour, in increments of 1 cup, until a soft, malleable dough takes shape. Cover with plastic membrane and let rest for 30 minutes. Shape the dough into oblong pieces, about 2 inches (5 cm) long and 1 inch (2.5 cm) thick. Using the tines of a fork, prick the tops lightly to form a decorative pattern. Place in an oiled pan, mounded side up, about 2 inches apart, and bake for about 20 minutes, until lightly browned. Remove from the oven and let cool. While the melomakarona are cooling, make the syrup: Place all the syrup ingredients in a medium size pot and bring to a boil. Reduce heat and simmer for 5 minutes. Dip the melomakarona in the hot syrup and place on a platter. Sprinkle with cinnamon and finely ground walnuts and serve.
