Preheat oven to 350F (175C). 2. In a heat proof bowl beat eggs with sugar until light and fluffy add butter and honey. Set the bowl over a bain-marie (double boiler). Stir until butter is completely melted and sugar is dissolved. 3. Add baking soda to the honey and butter mixture and whisk. Gradually add flour and mix with a wooden spoon until dough forms. 4. Knead the dough on a lightly floured surface. Divide into 8 equal pieces. Shape each piece into balls. Roll each piece into very thin layer, trim the rolled dough using a 7-Inch (18 cm) cake ring/cake pan. 5. Pierce each layer with a fork. Bake for 7-8 minutes or until golden. To save time, while baking one tray, roll out other dough pieces. Bake the leftover dough as well (it may take less time), let cool, then process baked leftovers into fine crumbs. 6. Make the cream: in a large place bowl heavy cream, vanilla extract and powdered sugar. Beat to medium-stiff peaks. Fold whipped cream into the sour cream until smooth. 7. Once the cake layers are cooled you can assemble the cake. Spread about 3 tablespoons of cream on one layer, Stack the second layer on top and repeat until you have 8 layers. Spread extra cream on top and sides. Spread reserved cake crumbs on top and sides of the cake. 8. Refrigerate the cake overnight. Notes: * To reduce time, you can bake few layers at the time. But only on one baking tray. Medovik Russian Honey Cake - I had always been curious about the Russian Honey Cake as it is not a typical cake with batter. The cake is made out of a dough. It’s a wet dough I know, but don’t attempt to add anymore flour to harden it as it will be firmed up when you refrigerate it. The wetness is good as it will give the layers a moist and soft texture, just like other cotton cakes. This is literally the first time I made this cake, and also first time trying out a sour cream frosting. Amazingly the frosting turned out so smooth and silky soft which makes the entire cake so flavourful. This recipe can give you about 10 layers of 6x6 inch cutter. You can cut the layers in any size or shape you desire, it will still give you a good amount of amazing looking layer cake. Not difficult to make at all. I hope you’ll inspired to give this a try. FOR FULL RECIPE, please visit my blog at 🤍 Ingredients: • Honey Cake Layers I used 6x6 inch ring 400g [3¼ cups] all-purpose flour aka plain flour 2 large eggs 170g [½ cup] honey 15ml [1 tbsp] water 150g [¾ cup] sugar 113g [½ cup] unsated butter 1 tsp baking soda ¼ tsp salt ½ tsp grd cinnamon • Sour Cream Frosting 500g [2 cups] whipping cream 420g [1¾ cups] sour cream 60g [¼ cup] honey 50g [⅓ cup] powdered sugar 1 tsp vanilla extract syrup [1 tbsp honey + 2 tbsp hot water] honey for drizzle as desire Instructions: • Honey Cake Layers 1. Sift the flour and set aside. 2. Beat the eggs and set aside. 3. In a stainless steel pot, add honey. Bring it to a boil on low heat until the honey is further caramelised and slightly thickened. This will take a minute or so. Off the heat. Carefully add in the water. Move the pan to mix them. 4. Add in the sugar. Give it a quick mix to combine. Put the heat back on low as you’re going to dissolve the sugar. 5. Add in the butter. Cook until the butter is completely melted. The sauce is gradually thickened up and caramelised looking. The longer you cook, the darker the sauce will be. Off the heat. Immediately as in the baking soda. Be cautious as the volume will double up and frothy. Keep mixing. Remove the pot from the stove. 6. Add in salt and cinnamon powder. Mix until combined. 7. Transfer the sauce into a large mixing bowl. 8. Immediately after that, gradually add in the eggs. Yes, the mixture is still either hot or warm, that’s fine. That’s why we add the eggs in slowly. The mixture will become thick and sticky. 9. Add the flour in a few batches. Use you use a whisk to mix them to combine. Towards the end, it will become a wet dough. Whisk will be hard to move around, switch to a spatula to fold them together. The dough is soft and sticky, do not attempt to add more flour. Wrap the dough with cling film. Refrigerate for at least 1½ to 2 hours. 10. After 2 hours, the dough is pretty much firmed up. Flour the work surface. Cut the dough into 10 pieces. Roll individually into a ball shape and set aside on a pan with a tea towel covering them to keep them moist. 11. Sprinkle some flour on a non-stick parchment paper. Roll the dough out into a very thin layer of about 1mm. The thickness is just nice for the cake layers. Roll out to the size of your ring cutter. If you do not have a ring cutter, it’s totally fine. Just cut a piece of paper of the size you desire as a standard guide for all the layer. Once cut out the size, keep the excess of the sides for use later. 12. Bake in preheated oven at 180°C/355°F for 5-6 minutes. I baked mine for 5½ minutes. The colour of the layers depends on the your baking time. 13. Let the layers completely cool before removing from the parchment paper. Once cooled, it will be easier to remove the paper. 14. Set all the baked layers aside. 15. For the remaining excess of the dough, line them on a pan. Bake them in preheated oven at 180°C/355°F for 8-9 min or until they are dry and crispy. Let them cool completely. 16. In a food processor, crush the baked excess fine, and a small amount in coarse or bigger chunks sizes. Set these aside for the deco part later. • Honey Syrup 1. Mix honey and hot water until the honey dissolved. 2. Set it aside to a cool completely before use. • Sour Cream Frosting 1. In a mixing bowl, add whipping cream. Whisk or mix it until it’s slightly thickened. 2. In another bowl, add sour cream, honey, powdered and vanilla extract. Mix until it’s softened and creamy. 3. Add the whipping cream into the sour cream mixture in 2 batches. Mix until combined, do not over mix. Add in the remaining whipping cream, mix until stiff, do not over mix. It stays amazing in the fridge for several days, so this is also a great make-ahead cake! It’s definitely a special occasion cake and will amaze your crowd! It requires some patience in creating this beautiful cake, but its really worth it! Ingredients Honey Cake 115 gr or 1 stick of butter 150 gr or ¾ cup of granulated sugar 2 eggs 2 teaspoons of baking soda 100 gr or ¼ cup honey 450 gr or 3½ - 4 cups flour ( add slowly) White chocolate, cookies and walnuts ( for decoration optional) Filling 200 gr of cream cheese, you can use any soft cheese 1 can (240 ml) sweetened condensed milk 200 gr of sour cream 1 teaspoon vanilla extract 300 gr or 1 cup heavy cream 6 Tablespoons icing sugar Directions Step 1: Make sure you use a nonstick pan, as this is a quick process. Place the butter and sugar in your pot. Cook it just until the butter melts but is still barely warm. Make sure it is not hot. I turn the heat off halfway through and just mix my butter in. Step 2: Add the eggs, baking soda and honey and mix to combine. Step 3: Cook the mixture on medium-low heat for about 6-7 minutes, The mixture should almost double in size and will turn a deep caramel colour. Take it off the heat. Step 4: Add the flour and mix quickly with a wooden spoon. I always add less flour than I need and add more when I'm rolling out the cake layers. If you add too much flour, it will be really hard to roll out. Step 5: On a lightly floured surface, roll out the cake layers. You have to work quickly, if the mixture goes cold it will be very hard to roll it out. If it's sticking to your hands and the counter, add more flour. Roll it out thinly into somewhat of a circle. Use a plate to cut a perfect circle. You can save all the scraps just the way you cut them and place them on a baking sheet and then bake. Later, you can crush them into crumbs and sprinkle the sides and top of the cake. Step 6: In your preheated oven at 400 F or 200 C, place the first circle layer of the cake and bake for 2-3 min until golden brown. Repeat the process with all the dough. You should have approximately 10-12 cake layers. Step 7: Once all the layers are baked, leave them aside to cool and make your filling. Step 8: Cream the softened cream cheese and condensed milk with a hand mixer until it's well combined. Step 9: Add the sour cream and vanilla and mix to combine. Step 10 : In another bowl, whip the heavy cream with the icing sugar. Step 11: Gently mix everything together. Set aside. To assemble the cake: Step 12: Place a dollop of frosting into the centre of the plate, just to keep the cake from sliding around. Step 13: Top each cake layer with several spoons of frosting and spread it around evenly. I like to use a lot of frosting, to make sure the cake is moist and yummy. Step 14: Repeat with all the cake layers. As you place the layers on top of each other, some of the frostings will ooze out of the sides. Spread it out evenly over the sides. Step 15: Grate some white chocolate on top of the cake and use crushed walnuts nuts around the cake. Spread some cake crumbs all over the cake and decorate with some berries. Enjoy. Smjesa će zapjeniti. Prohladiti smjesu. Kratko izmiksati jaja i dodati ih u toplu (ne vruću) smjesu maslaca, meda i šećera… sjediniti te dodati i brašno. Sve kratko izmiksati u meko glatko tijesto. Podijeliti u 6 vrećica za zamrzivač (3 l) , u svaku cca 180 g. Ohladiti pola sata u frižideru pa oklagijom rastanjiti. Ja sam to radila odmah i nisam imala problema sa korama. Nakon valjanja ih zamrznuti da očvrsu jer ćete ih tako lakše premjestiti na pek papir. Obožavam metodu sa vrećicama jer stvarno radi sa svim pitama i kolačima sa dosta kora! 🤗 Pekla sam kratko na 180* bez ventilatora - 6-7 min. Krema: 1700 g milerama - 22% mliječne masti 400 g šećera -pjenjačom sjediniti mileram i šećer, vagati za svako mazanje 400 g. Premazati kore i ostaviti 24 sata da se smekšaju i fino sljube sa kremom. Naše su bile mekane već nakon 16 sati (pitajte me kako znam 🫣) Uglavnom - super jednostavno i prefino. Ponovit ću sigurno, iako je meni bilo mrvicu slatko pa ću pokušati oduzeti barem 50 g šećera u korama. Javim dojmove. Die saure Sahne in der Creme gibt den perfekten Ausgleich 😍 Ein Geschmackserlebnis, das ich euch sehr an's Herz lege ❤️ Für den Teig: • 3 Eier • 265 g Honig, zB. Waldblütenhonig • Prise Salz • 280 g Mehl • 1 EL Natron (optional 1 Packung Backpulver) • 1 EL Essig Für das Zuckerwasser: • 80 g Zucker • 100 ml Wasser Für die Creme: • 800 g saure Sahne (optional Schmand, Creme Fraiche) • 250 g gezuckerte & karamellisierte Kondensmilch (Dulce de Lece) Alternativ zur Dulce de Lece könnt ihr 200 g gezuckerte Kondensmilch nehmen. Oder die Dose gezuckerte Kondensmilch in einem Topf mit Wasser legen, sodass die Dose komplett mit Wasser bedeckt ist. Das ganze 4 Stunden lang kochen. Dabei immer wieder Wasser nachgießen, da es verdunstet. Dann erhaltet ihr ebenfalls Dulce de Lece.
